Bacon Wrapped Pineapple Shrimp with Chipotle Sauce

Ingredients:

12 jumbo shrimp, deveined

Salt, to taste

Pepper, to taste

1/4 of a fresh pineapple cut into bite sized chunks or one 14-ounce can pineapple chunks in natural juice, drained

6 slices center-cut bacon, cut in 1/2 crosswise

12 wooden toothpicks

 

Chipotle Sauce:

 

Ingredients:

1 tablespoon olive oil

3 cloves minced garlic

1/2 small white onion, chopped

2 chipotles in adobo, chopped, plus 1 tablespoon adobo sauce

1/2 cup chopped fresh pineapple

1 – 14.5 ounce can diced tomatoes and their juices

1/2 cup ketchup

1 tablespoon apple cider vinegar

1 tablespoon yellow mustard

 

Instructions:

Pre-heat your grill to medium-high heat

 

Make Sauce – In medium saucepan, heat oil over medium heat. Add garlic and onion; cook 3 to 5 minutes or until golden brown, stirring frequently. Add chipotles, adobo sauce, and pineapple. Cook 1 minute, stirring constantly.

 

Stir in tomatoes in their juices, ketchup, vinegar, mustard and ½ teaspoon salt and pepper; heat to boiling over medium-high heat. Reduce heat to medium-low and simmer 10 to 15 minutes or until thickened, stirring occasionally. Transfer sauce to blender and blend until smooth.

 

Holding a shrimp, nest a chunk of pineapple in the curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick.  Wrap and secure all 12 shrimp.

 

Brush shrimp with sauce.  Place on the grill then cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.  Brush with more sauce and serve.
