End of Summer Sliders with Grilled Corn on the Cob

Ingredients:

 

Sliders:

1 lb ground beef (if lean add a bit of bacon fat or 1 egg)

Salt and pepper to taste

Swiss or American cheese (or other cheese of choice)

Pickles

Ketchup

 

Instructions:

 

Sliders:

  1. Mix ground beef with 1 egg or bacon fat, if necessary, to keep slider patties together.
  2. Use hands to mix and shape the beef into 8 small patties.
  3. Put the sliders to the side until ready to grill. Once the grill is heated, place the patties on the grill and cook to the desired internal temperature and flip at least once.
  4. Remove the patties, add a couple small slices of cheese, pickles, ketchup, and pair with the delicious summer corn recipe below!

 

Perfectly Grilled Summer Corn With Butter:

 

Corn:

4 ears of corn

Salt to taste

Easy BBQ Butter (see below recipe)

Herb Butter (see below recipe)

 

Easy BBQ Butter:

½ lb. softened butter

4 oz of your favorite BBQ sauce

½ tsp black pepper

Seasonal salt to taste

 

Mix all ingredients together in medium bowl until smooth.

 

Herb Butter:

½ lb. softened butter

¼ cup of fresh herbs (chives, basil, or tarragon) – chop finely

1 tsp salt

Freshly ground pepper to taste

 

Blend the ingredients in a food processor until smooth for a silky finish.

 

  1. Heat grill to medium temperature
  2. Remove the silk from the corn without stripping the outer husks completely, pulling back gently.
  3. After you finish, place ears of corn into a bowl of ice water with a tablespoon of salt for about 10 minutes.
  4. Remove corn from water, place ears of corn on the grill, and close the cover of the grill for about 15 minutes. Turning every 5 minutes.
  5. Once kernels are tender and ready to eat – remove husks, split into 8 halves and serve with the BBQ butter and herb butter while they're hot!
