Grilled Fajita Burrito - Recipe

Grilled Fajita Burrito…doesn’t that name just make you hungry? A burrito isn’t something most people think about when grilling comes to mind…but try it and you’ll never look back! Bring some spice into your life by mixing Caribbean flavors with Mexican and Tex-Mex yumminess for this flavor-packed explosion of taste…mmmm. The end result may look labor-intensive, but this dish is an easy one to prepare and is a recipe the whole family will love. Here we have classic ingredients transformed into something magical just from their interaction with a Watchman Stove!

 

Make your own version of this by trying out different proteins, veggies, types of cheese, tortillas…really, there’s no end to the variations you can try! The same can be said about the condiments you choose to serve this with – go a little crazy! Guacamole, salsa, hot sauce…okay if you weren’t hungry before, you have to be now. Use your imagination and get cooking with your Watchman Stove!

 

Ingredients:

8 oz - Sirloin

1/2 lb - Chicken

1 each Yellow, Red and Orange Bell Peppers

1 small Yellow Onion

1 TBS - Reload Spice Rub

1/2 cup - Caribbean Jerk Marinade

1/2 cup - Caribbean Mango Marinade

 

For garnish

1 - Avocado

Plain Greek Yogurt

Lime Juice

Shredded Mild Cheddar

Tortilla Shells

Jalapeno

 

 

STEPS:

  1. Start by preparing your meat. Cut your chicken and sirloin into strips and place into separate sealable containers. Add 1/2 cup of Caribbean Jerk Marinade on to the Sirloin and 1/2 cup of Caribbean Mango Marinade. Mix well so the meat is fully coated. Seal your containers and let them marinade for at least 4 hours in the fridge. It's best to marinade them overnight.

  2. Light the grill. Set up your Watchman Stove and let it heat to 400 degrees.

  3. Prepare your veggies. Slice your onions and bell peppers into strips. We prefer to remove the seeds of the bell peppers.

  4. Place your veggies on the grill, stirring regularly. Evenly sprinkle about a tablespoon of Reload Spice Run. Grill until the onions have softened.

  5. Scoot your veggies aside and place your chicken on the grill. Cook for about 10-15 minutes, or until the meat is cooked all the way through.

  6. Move your chicken off to the side as well and cook your sirloin to your preferred doneness.

  7. Mix your veggies, chicken, and sirloin together. Heat these for 1-2 minutes to ensure everything is nice and hot.

  8. Assemble your burritos. We like ours with shredded mild cheddar, black beans, lime juice, and jalapenos. Then we serve them with plain greek yogurt or sour cream and avocado. Upgrade this by grilling your tortillas before, after, or both.
