Grilled Peach Berry Pie

Ingredients:

1 pie crust (fresh or frozen)

3 cups blueberries, raspberries, and peaches (fresh or frozen)

1/3 cup of white granulated sugar

2 tbsp cornstarch

1 tbsp fresh lemon juice

Lemon zest from 1/2 a lemon

1 tsp heaving whipping cream

2 disposable baking foil pie pans

 

Instructions:

  1. Preheat your grill to 350 degrees or as close as you can get.
  2. Wash the berries and place in a large bowl. Sprinkle the berries with sugar, cornstarch, lemon zest and juice. Mix together with your hands
  3. Unfold your pie crust and press to the bottom of the foil pie plate.
  4. Place fruit mixture in center of the pie plate and fold up the edges; brush the pie crust edges with the heavy whipping cream and lightly sprinkle with a white sugar.
  5. Take the second foil pie plate and place it upside down on the grill. Place the prepared pie (in pan) on top of the inverted pie pan and close the grill lid.
  6. Cook until the crust is cooked thoroughly, about 20 to 30 minutes depending on the size and how high the heat is. You should be checking the pie every 15 minutes to make sure that it doesn’t burn.
  7. Remove the pie carefully from the grill and cool before slicing and serving. Have a slice with a side of ice cream or whipped cream!
