Grilled Portabella Mushrooms

Ingredients:

8 large portabella mushrooms

Olive oil (enough for brushing on mushrooms)

2-3 heirloom tomatoes (thinly sliced, sandwich style)

2 cups of fresh or shredded mozzarella

1/2 cup of fresh basil

Balsamic vinegar to drizzle

 

Instructions:

  1. Prepare the grill for cooking
  2. Clean and prep each portabella mushroom and lightly brush with olive oil
  3. Set portabella on grill tray or plate and cook for 5 minutes on each side.
  4. Remove mushrooms from heat.
  5. Divide the tomatoes and mozzarella into 8 portions
  6. Fill cap in this order: first with tomato slices, then 2 to 3 basil leaves, and finally top with serving of cheese.
  7. Carefully place the layered portabella back on the grill tray and let the cheese bubble up to perfection
  8. Add a splash of balsamic vinegar
