Grilled Steak and Blue Cheese Pizza

Ingredients:

 

Pizza Dough:

2/3 cup lukewarm water (105 degrees F to 115 degrees F)

2 1/2 tsp active dry yeast

1/2 tsp sugar

2 tbs olive oil, plus additional for oiling bowl

1 3/4 cups all-purpose unbleached flour

1/4 cup finely ground yellow cornmeal

2 tsp salt

 

Steak:

1 (12-ounce) NY strip steak

Canola oil

Salt and freshly ground black pepper

 

Pizza:

1/2 recipe Pizza Dough rolled into 2 (10-inch) rounds, recipe follows or 2 store-bought pizza dough

1 cup grated Mozzarella cheese

1/2 cup crumbled blue cheese

Grilled steak

2 cups arugula

 

Balsamic Glaze:

2 cup balsamic vinegar

1 tbs honey

 

 

Instructions:

 

Pizza Dough:

  1. In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes
  2. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and mix until the mixture forms a dough
  3. Knead dough on a floured surface, add additional flour as needed to prevent dough from sticking. Form the dough into a ball.
  4. Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour.
  5. Gently punch the dough down and cut into 4 equal pieces.
  6. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Stack the crusts and save.

 

For the Steak:

  1. Preheat your grill to high heat
  2. Season steak on both sides with oil, salt and pepper
  3. Grill for about 5 minutes on each side, it will look golden brown and slightly charred and cook to medium-rare
  4. Remove from the grill to a cutting board and let rest for 10 minutes
  5. Slice into 1/4-inch thick slices

 

For the Glaze:

  1. Heat the vinegar sauce pan over medium-high until it starts to boil. Reduce to medium-low to simmer until reduced to about 1/2 cup (about 30-40 minutes).  Remove from heat to cool, it will thicken slightly, once cooled stir in the honey

 

For the Pizza:

  1. Heat the grill to high
  2. Brush both sides of the pizzas with oil and season with salt and pepper
  3. Grill until golden brown on both sides, about 2 minutes per side
  4. Remove from the grill, divide the Mozzarella cheese over the top of each one and then sprinkle with the blue cheese.
  5. Place back on the grill, grill until the cheese has melted
  6. Remove to a flat surface, divide the steak between each pizza
  7. Top with the arugula
  8. Drizzle each with the balsamic glaze
