Grilled Vegetable Skewers

Ingredients:

2 medium yellow squash

2 medium zucchinis

2 red onions

1 red bell pepper

1 yellow bell pepper

12-15 cherry tomatoes

½ pound of Baby Bella mushrooms

1/3 cup of olive oil

½ tsp salt

½ tsp pepper

½ tsp red pepper flakes

½ tsp dried oregano

½ tsp basil

¼ tsp garlic powder

8-12 wooden or metal skewers

 

 

Instructions:

  1. If using wooden skewers soak 8-12 of them in water for 15-30 minutes.
  2. Peel the red onions, cut them in half and then cut each half into thirds for a total of six sections per onion.
  3. Cut the zucchini and squash into 1/3-inch-thick coins.
  4. Cut the bases off the Mushrooms and cut in half.
  5. Put all the vegetables into a large bowl.
  6. Start skewering the vegetables in an alternating pattern.
  7. Once all the vegetables are on skewers, place them on a large plate or baking sheet..
  8. Pre-heat your grill to medium heat and lightly coat the grate with oil.
  9. Take the remaining ingredients and combine them in a small bowl. Mix thoroughly and proceed to pour the mixture over the vegetable skewers.
  10. Once the grill is hot and the skewers are coated in the oil mixture, move the skewers to the grill.
