Grilled Veggie Burgers - Recipe

Ingredients:

2 Tbsp. extra-virgin olive oil, plus more for greasing

1 cup cremini mushrooms, finely chopped

2 14.5-oz. cans black beans, rinsed, drained well

¼ cup almond butter

¼ cup mayonnaise

2 garlic cloves, finely grated

3 tsp. chili powder

1 tsp. cumin

2 tsp. salt

2 cups cooked quinoa (we prefer red or black), cooled

¼ cup flaxseed meal

2 Tbsp. cornstarch

 

To Finish:

Toasted Buns

Pickled onions

Tomato

Lettuce

Pickles

Chipotle Yogurt (recipe below)

 

Steps:

  1. Prepare a grill for medium-high, direct heat. Clean and oil grate.

  2. Heat 2 Tbsp. oil in a large nonstick skillet over medium. Cook mushrooms and beans, tossing occasionally, until beans look slightly dried out and their skins are darkened, 10–12 minutes.

  3. Meanwhile, whisk almond butter and mayonnaise in a medium bowl until smooth. Whisk in garlic, chili powder, and salt.

  4. Add mushroom-bean mixture and cooked quinoa and stir well to combine.

  5. Stir flaxseed and ¼ cup cold water in a small bowl. Let sit until thick paste forms, about 1 minute.

  6. Add to mushroom-bean mixture along with cornstarch and stir well to combine.

  8. Using oiled hands, form mixture into 8–10 patties about ½" thick (about a scant ¾ cup each).

  9. Grill until lightly charred around the edges, about 2 minutes.

  10. Turn carefully using a metal spatula to cleanly lift off grate and grill until lightly charred on the second side and warmed through, about 2 minutes more.

  11. Place burgers on bottoms of buns. Pile high with pickled onions, tomato, lettuce, pickles, and chipotle yogurt.

  12. Close with top bun and serve.

 

Chipotle Yogurt

 

Ingredients:

 

1 cup plain Greek yogurt

1-2 small chipotles in adobo, seeds removed – adjust to taste based on desired level of spiciness

1 clove of garlic

Juice of 1 lime

Salt to taste

 

Steps:

  1. Combine all the ingredients in the blender or mini-food processor.

  2. Mix until you have smooth creamy sauce.

  3. Taste and adjust the spice level based on your preference.
